Stuffed Peppers

If there is anything I've learned trolling the internet, its that everyone has their own version of stuffed peppers. I remember my mom making them as a kid and thinking they were the grossest thing ever. When I mentioned wanting to make them the first time, Marc was less than enthusiastic remembering his own mother's version - which was entirely different from my mother's version. You're able to multi-task through this recipe which makes it pretty quick to put together. I've separated the directions based on ingredients to try to make it easier to understand. The pictures will also help in explaining the order considering how many things get done at once.


Ingredients

3 large green bell peppers
1 pound ground beef (leaner the better)
1 jar red tomato sauce
1 cup rice
Salt
Pepper
Small amount of mozzarella cheese




Procedure

Prep:
1. Cover a baking dish that is large enough to hold peppers with a thin layer of tomato sauce
2. Pre-heat oven to 350 degrees

Peppers:
1. Cut off the tops and bottoms of the green peppers
2. While keeping the pepper intact, remove the "guts" and seeds. (I just cut in a circular motion inside the pepper)
3. Boil peppers until softened
4. Remove from water and drain.
5. Place standing up in prepared dish

Rice:
1. Boil water and prepare rice per instructions on the package

Ground Beef:
1. Brown ground beef 
2. Season beef with salt and pepper
3. Drain excess fat/oil from skillet
4. Lower heat to medium-low
5. Combine rice and ground beef into skillet
6. Smother with red sauce reserving approximately 3 tablespoons for later
7. Spoon ground beef/rice combo into peppers
8. Bake for 30 minutes
9. Remove from oven
10. Place 1 tablespoon of sauce on each pepper
11. Sprinkle mozzarella cheese on top of peppers
12. Bake until cheese is melted.
13 Allow to cool before eating.

It's a recipe that both Marc and I enjoy. I consider it a big win considering he isn't much of a green pepper fan.
