Cheap and Easy

I'm a big fan of things that are cheap and easy. Dinner is no exception to this, so long as it still tastes good. We made chicken burrito things tonight. They are fairly quick, require very little active work from you, and are tasty.

Ingredients

Flour tortillas/Wraps/Burrito wraps - any will work
1 package black beans and rice
2 chicken breasts
Shredded Cheddar Cheese


Procedure:

1. Pan fry thawed chicken breasts in a large frying pan.
2. Start boiling water for rice while chicken cooks.
3. When chicken finishes cooking remove from heat and put to the side
4. Follow the directions on the package for the rice and beans
5. About 3 minutes into the rice boil time - add the chicken
6. Spread cheese over tortilla
7.  When rice finishes add directly on top of cheese
8. Wrap up and eat!


Vigo, a Spanish foods importing company based in Tampa, puts out a number of rice/bean combinations. We like the black beans and rice aka "Cuban" flavored, but red beans and rice provide a more Creole/Paprika flavor. I'm sure there are multiple other companies that produce the same type of products, I just don't know of them. Oh! And Vigo has a "cookbook" on their website. Obviously it advertises the use of their own products but, whatever, free recipes are indeed free recipes. Here's the link for the adventurous:
