Blackened Chicken with Guacamole

Marc came home one night and proudly declared that he was going to make a co-worker's guacamole. He did in fact make it that night, but then we needed to figure out what to do with it. The power of Google kindly proudly sputtered out a recipe to help with this issue. Therefore, I present to you, the long awaited Blackened Chicken and Guacamole recipe:


Ingredients:

4 skinless, boneless chicken breasts
1 Lime
2 Hass Avocados
1 tomato
1 Jalapeno Pepper (2 dependent on heat preference)
1 Small Red Onion
¼ cup cilantro
Butter (¼ cup approximately)

Spice Rub:
1 teaspoon salt
1 tablespoon paprika
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon dried thyme
¼ teaspoon cayenne pepper
½ teaspoon black pepper
½ teaspoon oregano


Procedure:

Guacamole:

1.Mix a heavy pinch of salt, a heavy pinch of pepper (black or white), a pinch of ground cumin and the juice of the lime together in a mixing bowl
2.Stir until well mixed
3.Halve the avocados and remove pit
4.Spoon contents out of the avocados and discard skins
5.Dice tomato into ¼ inch pieces discarding seeds, juice and innards of the tomato
6.Add to bowl
7.Dice jalapeno pepper removing seeds and veins
8.Add to bowl
9.Roughly chop the cilantro and add to bowl
10.Finely dice red onion
11.Add to bowl
12.With a fork or potato masher mix the ingredients together and mash to preferred consistency
(We recommend smooth with some chunks)
13.Refrigerate approximately 15-25 minutes 


Chicken:

1.Pre-heat grill (I usually only turn on three of the burners for something like this)
2.Melt butter
3.Brush chicken with melted butter
4.Coat chicken breasts in seasoning
5.Repeat for both sides
6.Grill for 8-10 minutes, turning halfway through
7.Add extra seasonings during the grilling process if necessary or desire (remember seasoning may fall off when you're moving the chicken around pre-grilling)
8.Allow to rest for 2-3 minutes

A shout out to Marc's co-worker, Stephen, for the guacamole recipe. This meal was sooo good and so easy to make. I was surprised at how well it all came together. We paired it with some white rice, which was nothing fancy...just stuff from the bag. It was definitely nice to have something and flavorful for dinner.
